Also, it's interesting to note that Hattori Akira is no longer the editor of One Piece! It is now a newbie named Isaka Takeru (4:48, video 1) and he's the 7th editor to edit One Piece. He's in his first year at Shueisha. Reminds me (very superficially) of Kosugi BUT, Akira is shown at 5:27 of the same video with his hair cut!! Remember he had long hippie hair in the Jumbang episode? Anyway he says that the reason why Isaka was chosen was because Isaka had a good idea of what Jump's image was meant to be like and his personality suited working with Oda-sensei.

And although we don't get a frontal look at the Bleach editor (4:13, video 1) it doesn't look like Hattori Yuujirou anymore...

Another thing I found interesting was something we hadn't seen in Bakuman before - the adding of text into the bubbles. Here are the steps (video 2, 4:20 or so onwards)
1. Mangaka writes text into bubbles
2. Editor counts number of characters in a line and choose a font size and writes the font size needed
3. Gets passed on to the printing company
4. Manuscript is scanned into a computer
5. All the written text is removed and replaced with typed text. There are about 30 different fonts in Jump. All in all the replacing of text takes about 4 hours
6. Manuscript sent back to Jump for the editor to check, vice-EIC checks
